Pumpkin Cupcakes with Cream Cheese Frosting

Hey everyone! There is going to be a bunch of fall recipes headed your way! This is not HHN or Disney related, but you can definitely add a Disney/HHN touch! I thought I wasn’t a big fan of pumpkin, but these cupcakes have converted me. I love them! I love the fall time and I am excited to start baking more. Let’s get started!

I changed the recipe only slightly, but I followed most of the recipe.


What you will need:

Pumpkin Cupcakes

  • ½ cup oil
  • ½ cup pumpkin puree
  • 1 ¾ all-purpose flour
  • ½ cup of packed light brown sugar
  • ½ cup of granulated sugar
  • 2 eggs
  • ½ teaspoon of ground cinnamon
  • ½ teaspoon of apple pie spice
  • 1 teaspoon of vanilla extract
  • ½ salt
  • ¼ teaspoon baking soda

Cream Cheese Frosting:

  • 2 ½ cups sifted powdered sugar
  • 8 ounces of cream cheese
  • A pinch of salt
  • ½ cup butter
  • ½ teaspoon of ground cinnamon
  • ½ teaspoon of vanilla extract
  • Piping bag with any tip of your choice

What you will need to do:

Pumpkin cup cake:

  1. Preheat the oven to 350 degrees celsuis.
  2. Mix all the dry ingredients into a large bowl with a whisk (flour, cinnamon, apple pie spice, salt, and baking soda.
  3. Mix the wet ingredients in a small bowl (both sugars, pumpkin puree, vanilla extract, eggs, and oil)
  4. Add the wet ingredients to the large bowl and mix with a rubber spatula. Do not over mix. Only mix until it is all blended.
  5. Use an ice cream scooper and scoop out the mixture onto a cupcake liner into the cupcake tin. Make sure you fill it up ⅔ full.
  6. Bake in the oven for 20-25 minutes (I would put 20 and check to see if they are ready and if they are not, leave them in the oven for 5 minutes more).

Cream cheese frosting:

  1. In a medium bowl cream the butter and the cream cheese with a hand mixer
  2. Add in the sifted powdered sugar and mix
  3. Add in the salt, ground cinnamon, and vanilla and mix
  4. Add the frosting into a piping bag
  5. Once the cupcakes had enough time to cool, frost the cupcake using any design you would like!


You could add any Disney/HHN related decorations if you would like. I would suggest using melted chocolate to create the shape of mickey mouse’s head and add it on top of the frosting!
